Crescent Roll Breakfast Casserole

INGREDIENTS

1 crescent roll tube (8 ounces)

1 pound mild sausage

6 eggs

2 heaping cups of shredded cheddar cheese

DIRECTIONS

Preheat oven to 350 degrees and grease a 9×13” baking dish.

Unroll crescent dough and press it into a greased baking dish. Remember to press the perforated edges together with your finger until the dough is as smooth as you can get it.

Add sausage to a skillet and cook until it is browned, breaking it up into crumbles as it cooks. Let it drain on a paper towel-lined plate while you make the egg mixture.

Add the eggs to a large bowl and whisk as if you were making scrambled eggs. Add any seasoning you like and whisk some more.

Sprinkle the sausage over the dough, then the cheese in an even layer, and finally pour the egg mixture over the top of everything.

Bake for 35 to 40 minutes. Let casserole cool slightly before serving!

The food we eat nourishes our bodies; how do we nourish God’s Holy Spirit, who lives in us? When we partake of the Eucharist, we are receiving the spiritual, sacramental presence of Christ, and Christ is there for us in everyday life as He brings us joy and comfort.

In Scripture, we read about two disciples walking on the road to Emmaus, dejected because Jesus had died and they were not aware of His Resurrection. On the road, they were joined by a stranger who they invited to stay and have a meal. At that meal, as they were eating, the stranger took the bread, broke it and gave it to them. With this, their eyes were opened and they recognized the stranger as Jesus, but He vanished from their midst.

When we partake of a meal, or at any time, let us remember the words of Saint Paul to us: “Do you not realize you are a temple of the Holy Spirit?”

Like our physical bodies need nourishment, the Holy Spirit of God living in us needs our nourishment. We can do this by receiving the Body and Blood often in the Holy Eucharist and living a life that is worthy of God’s presence within us.
